Recipes to up your Vegan Game - Raw papaya Salad

One of the first recipes that I tried on my whole-food plant-based vegan journey was the Raw Papaya Salad. If you're looking for a flavorful and healthy dish that's both raw and plant-based, look no further than raw papaya salad! Ingredients:

  • Thinly sliced Raw papaya-2 Cups
  • Chopped green beans-1/2 cup
  • Thinly sliced Raw Mango-1/2 cup
  • Roasted crushed peanuts-1/2 cup

For the Dressing:

  • Olive oil-2 tbsp
  • Jaggery powder-1 tsp
  • Lemon juice-2 tbsp
  • Finely chopped green chilli-1
  • Peeled garlic cloves-7
  • Black peppercorns-7 to 8
  • Pink Himalayan salt to taste
Directions:
 

Dressing:

  • In a bowl, combine freshly squeezed lemon juice, jaggery, and finely chopped green chili, garlic pods, and black peppercorns.
  • Using a pestle, crush the garlic pods, chillies, and peppercorns to release their juices into the dressing.
  • Drizzle in some olive oil and sprinkle in some salt. Mix everything thoroughly and let it sit for 10 minutes to allow the flavors to meld.

Salad Preparation:

  • Using a mandoline slicer (Amazon link to buy), thinly slice raw papaya and raw mango.
  • Finely chop green beans and add them to the papaya.
  • With a fork or salad mixer, mix everything together until well combined.
  • Pour the prepared dressing over the salad and add crushed peanuts. Stir everything together until well coated.
  • Garnish with crushed peanuts for added crunch and flavor.
